Ingredients:

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 large head iceberg lettuce, chopped
  • 2 cups shredded cheddar cheese
  • 1 cup cherry tomatoes, halved
  • 1 red onion, finely chopped
  • 1 cup sweet corn
  • 1 cup black beans, drained and rinsed
  • 1 cup Catalina dressing
  • 3 cups Doritos, crushed
  • 1/2 cup sliced black olives
  • 1/2 cup sour cream (for garnish)
  • Fresh cilantro (for garnish)

Directions:

  1. Cook ground beef in a skillet over medium heat until browned. Drain excess grease and add taco seasoning according to the package instructions.
  2. In a large bowl, combine chopped lettuce, shredded cheese, cherry tomatoes, red onion, sweet corn, and black beans.
  3. Add the cooked beef to the salad mixture.
  4. Right before serving, toss the salad with Catalina dressing and crushed Doritos.
  5. Garnish with black olives, dollops of sour cream, and fresh cilantro.
