  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups diced potatoes
  • 4 cups beef broth
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen peas
  • 1/2 cup diced carrots
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)
Directions:
  1. In a large pot, brown the ground beef over medium-high heat, breaking it into crumbles. Drain any excess fat.
  2. Add onion and garlic to the pot with beef. Cook until onions are translucent.
  3. Stir in potatoes, beef broth, thyme, rosemary, salt, and pepper. Boil, then simmer covered for 15-20 minutes until potatoes are tender.
  4. Add corn, peas, and carrots; simmer for 5-7 minutes until vegetables are tender.
  5. Pour in milk and cheese, stirring until cheese melts and soup becomes creamy. Adjust consistency with more milk if needed.
  6. Taste and adjust seasonings. Serve hot, garnished with parsley if desired.
