  • 1 lb. dry elbow macaroni pasta
  • ½ cup salted butter
  • ½ cup all-purpose flour
  • 2 cups milk, at room temperature
  • 2 cups half-and-half, at room temperature
  • 1 teaspoon Worcestershire sauce
  • 12 ounces cubed Velveeta cheese, at room temperature
  • 3 cups grated sharp cheddar cheese, divided (at room temperature)
  • 1 teaspoon salt
  • ½ teaspoon dry mustard
  • ¼ teaspoon black pepper
  • Pinch of nutmeg
Directions:
  1. Preheat oven to 325°F. Grease a 9 x 13-inch baking dish.
  2. In a pot of boiling water, cook pasta slightly less than al dente, drain.
  3. Melt butter in a Dutch oven, add flour, cook for 1 min. Gradually whisk in milk and half-and-half, bring to boil.
  4. Remove from heat, whisk in Worcestershire sauce. Add Velveeta and half of the cheddar, stir until smooth. Add seasonings.
  5. Add pasta to cheese mixture. Transfer to baking dish, top with remaining cheddar.
  6. Bake for 15 minutes. Broil for 2-5 minutes for a crispy top.
