Cranberry Orange Bread with Sweet Citrus Glaze

Ingredients:

For the Loaf:

  • 1 1/2 cups + 1 tablespoon all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 cup plain whole-milk yogurt
  • 1 cup sugar
  • 3 large eggs
  • 2 teaspoons grated orange zest
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup vegetable oil
  • 1 1/2 cups cranberries, fresh or frozen, thawed and rinsed

For the Orange Syrup:

  • 1/3 cup freshly squeezed orange juice
  • 1/3 cup sugar

For the Orange Glaze:

  • 1 cup confectioners’ sugar, sifted
  • 2 to 3 tablespoons fresh orange juice

Directions:

  1. Preheat the oven to 350°F (175°C). Grease the bottom and sides of a 9 x 5-inch loaf pan; dust with flour, tapping out excess.
  2. In a medium bowl, sift together 1 1/2 cups of flour, baking powder, and salt; set aside.
  3. In a large bowl, whisk together the yogurt, sugar, eggs, orange zest, vanilla, and oil. Gradually whisk the dry ingredients into the wet ingredients until just combined.
  4. In a separate bowl, toss the cranberries with the remaining tablespoon of flour, and gently fold them into the batter.
  5. Pour the batter into the prepared pan and bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  6. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack placed over a baking sheet.
  7. While the loaf is cooling, prepare the orange syrup by heating the orange juice and sugar in a small saucepan over medium heat. Stir until the sugar dissolves, then cook for an additional 3 minutes. Remove from heat.
  8. Poke holes in the top and sides of the warm loaf with a toothpick. Brush the orange syrup over the loaf, allowing it to soak in. Repeat the process until the syrup is used up. Let the loaf cool completely.
  9. For the orange glaze, whisk together the confectioners’ sugar and orange juice until the glaze is thick but pourable. Drizzle the glaze over the cooled loaf, letting it drip down the sides. Allow the glaze to harden before slicing and serving.
