Ingredients:

  • 3 cups mashed potatoes (about 3 large potatoes)
  • 2 eggs
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • 4 tablespoons chopped cooked bacon (can substitute ham or omit)
  • 2 tablespoons chopped chives (or green onions)
  • 2 tablespoons grated Parmesan cheese
  • Salt and ground black pepper, to taste
  • Sour cream, for serving (optional)
  • Additional chopped chives, for garnish (optional)

Instructions:

  1. Prepare the Mixture:
    • In a large bowl, combine the mashed potatoes, eggs, shredded cheddar cheese, chopped cooked bacon, chives, and grated Parmesan.
    • Season the mixture with salt and ground black pepper to taste. Mix well until all ingredients are fully incorporated.
  2. Prepare the Muffin Tin:
    • Preheat your oven to 400°F (200°C).
    • Grease a 12-cup muffin tin with baking spray to prevent sticking.
  3. Fill the Muffin Cups:
    • Using a large ice cream scoop, evenly divide the potato mixture into the muffin cups, filling each about 3/4 full.
    • Smooth the tops with the back of a spoon to create an even surface.
  4. Bake:
    • Place the muffin tin in the preheated oven and bake for 25-35 minutes, or until the tops of the potato pops are lightly browned.
    • Check for doneness at 25 minutes and continue baking if necessary until the tops are nicely browned.
  5. Cool and Serve:
    • Once baked, remove the muffin tin from the oven and let it cool for 5-10 minutes.
    • Run a knife around the edges of each muffin cup to loosen the potato pops.
    • Gently remove the potato pops from the tin and transfer them to a serving plate or platter.
  6. Garnish and Enjoy:
    • Serve the potato pops warm, with sour cream and extra chopped chives for topping, if desired.
