Ingredients:
- 5-10 tortillas (homemade or store-bought)
- 1 can enchilada sauce
- Shredded chicken (about half a chicken)
- Shredded cheese (preferably Mexican cheese like Asadero or Oaxaca)
Directions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the shredded chicken with about ¼ cup of enchilada sauce. Season with salt and pepper to taste.
- Warm the tortillas in the microwave for about 1 minute, flipping halfway through to ensure they are evenly warmed.
- To assemble the enchiladas, spoon some of the chicken mixture onto each tortilla, then sprinkle with shredded cheese. Roll the tortillas tightly and place them seam-side down in a large baking dish.
- Pour any remaining enchilada sauce over the top of the rolled tortillas and sprinkle with additional cheese.
