Ingredients:

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1/2 cup white chocolate, melted and slightly cooled
  • 1 cup fresh raspberries
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup raspberry jam

Directions:

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the butter and granulated sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. Gradually add the flour mixture to the butter mixture, alternating with milk, beginning and ending with the flour mixture. Stir in the melted white chocolate until fully incorporated.
  5. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then turn them out onto a wire rack to cool completely.
  6. While the cakes are cooling, whip the heavy cream with the powdered sugar until stiff peaks form.
  7. Once the cakes are cool, spread a layer of raspberry jam over the top of one cake layer. Spread a layer of whipped cream over the jam, then sprinkle fresh raspberries on top. Place the second cake layer on top.
  8. Frost the top and sides of the cake with the remaining whipped cream, and decorate with more fresh raspberries and white chocolate shavings if desired.
