  1. Cowboy Meatloaf and Potato Casserole

Ingredients:

  • For the Meatloaf:
    • 1 lb ground beef
    • 1/2 cup breadcrumbs
    • 1/4 cup onion, finely chopped
    • 1/4 cup milk
    • 1 egg
    • 1 tablespoon Worcestershire sauce
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon smoked paprika
    • Salt and pepper to taste
  • For the Potato Casserole:
    • 4 cups mashed potatoes (prepared)
    • 1/2 cup sour cream
    • 1/2 cup shredded cheddar cheese
    • 1/4 cup cooked bacon bits
    • 2 tablespoons green onions, chopped
    • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, milk, egg, Worcestershire sauce, garlic powder, smoked paprika, salt, and pepper. Mix until well combined. Shape the mixture into a loaf and place it in the prepared baking dish.
  3. Bake the meatloaf for 25-30 minutes or until it reaches an internal temperature of 160°F (71°C).
  4. While the meatloaf is baking, prepare the potato casserole. In a large bowl, mix the mashed potatoes with sour cream, shredded cheddar cheese, bacon bits, green onions, salt, and pepper.
  5. Remove the meatloaf from the oven and spread the potato mixture evenly over the top of the meatloaf.
  6. Return the dish to the oven and bake for an additional 10-15 minutes, or until the top is golden and the cheese is melted.
  7. Let cool for a few minutes before serving. Garnish with extra bacon bits or green onions if desired.
