Ingredients:

  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup sweetened shredded coconut
  • 1 cup mini marshmallows
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)

Directions:

  1. In a large mixing bowl, combine the drained crushed pineapple, shredded coconut, and mini marshmallows. Mix well until combined.
  2. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  3. Gently fold the whipped cream into the pineapple mixture until fully incorporated.
  4. If desired, fold in chopped pecans or walnuts for added texture and flavor.
  5. Transfer the mixture to a serving bowl or individual cups and chill in the refrigerator for at least 2 hours before serving.
  6. Serve chilled, garnished with additional shredded coconut or nuts if desired.
