Ingredients:

  • 8 oz elbow macaroni
  • 8 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup lettuce, chopped
  • 1/4 cup green onions, sliced
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Directions:

  1. Cook macaroni according to package instructions. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, whisk together mayonnaise, sour cream, Dijon mustard, salt, and pepper.
  3. Add cooled macaroni, bacon, cherry tomatoes, lettuce, and green onions to the bowl. Stir until everything is well coated with the dressing.
  4. Adjust seasoning with additional salt and pepper if needed.
  5. Refrigerate for at least 30 minutes to let flavors meld before serving.
