Baked Potato Chicken and Broccoli Casserole

Ingredients:

  • 4 medium potatoes, diced
  • 2 cups cooked chicken breast, cubed
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat oven to 400°F (200°C).
  2. Toss the diced potatoes in olive oil, salt, pepper, garlic powder, and onion powder. Spread them in a single layer on a baking sheet and bake for 20-25 minutes, or until golden and tender.
  3. In a large mixing bowl, combine the cooked potatoes, chicken, and broccoli. Stir in the sour cream, milk, and half of the shredded cheese. Mix until well combined.
  4. Transfer the mixture to a greased baking dish. Sprinkle the remaining cheese on top.
  5. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  6. Garnish with fresh parsley before serving.
