Ingredients:
- 4 medium potatoes, diced
- 2 cups cooked chicken breast, cubed
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Directions:
- Preheat oven to 400°F (200°C).
- Toss the diced potatoes in olive oil, salt, pepper, garlic powder, and onion powder. Spread them in a single layer on a baking sheet and bake for 20-25 minutes, or until golden and tender.
- In a large mixing bowl, combine the cooked potatoes, chicken, and broccoli. Stir in the sour cream, milk, and half of the shredded cheese. Mix until well combined.
- Transfer the mixture to a greased baking dish. Sprinkle the remaining cheese on top.
- Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley before serving.
