Garlic Parmesan Chicken Pasta Bake

Ingredients:

  • 12 oz penne or rigatoni pasta
  • 2 cups cooked chicken breast, shredded or cubed
  • 2 cups baby spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup chicken broth
  • 4 cloves garlic, minced
  • 2 tbsp butter
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Cook pasta according to package instructions. Drain and set aside.
  3. In a large skillet over medium heat, melt the butter. Add the minced garlic and cook for 1-2 minutes until fragrant.
  4. Pour in the chicken broth and heavy cream, stirring well. Add the Parmesan cheese and Italian seasoning, cooking until the sauce thickens slightly.
  5. Add the cooked pasta, chicken, and spinach to the skillet, stirring to coat everything in the sauce.
  6. Transfer the mixture to a greased baking dish and sprinkle mozzarella cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish with fresh parsley before serving.
