This Skinny Chicken Broccoli Casserole combines tender chicken and fresh broccoli, all wrapped in a creamy yogurt-based sauce. The addition of shredded cheese and Parmesan creates a deliciously cheesy yet light casserole. It’s the perfect comfort food without all the extra calories.

  1. Ingredients:
  • 2 cups cooked chicken breast, shredded
  • 2 cups broccoli florets, steamed
  • 1 cup plain Greek yogurt
  • 1/2 cup low-fat shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 1/4 cup whole wheat breadcrumbs (optional for topping)

Directions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken, steamed broccoli, Greek yogurt, shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, thyme, salt, and pepper.
  3. Transfer the mixture into a greased 9×9-inch baking dish, spreading evenly.
  4. If desired, sprinkle breadcrumbs on top for a crispy texture.
  5. Bake in the preheated oven for 25-30 minutes or until the casserole is bubbly and golden on top.
  6. Allow to cool slightly before serving.
