  1. Ingredients:
  • 1 lb ground beef
  • 4 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme (optional)
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional for topping)

Directions:

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add the ground beef, onion, and garlic, and cook until the beef is browned and the onion is soft, about 5-7 minutes. Drain excess fat.
  3. In a separate pot, boil the diced potatoes in salted water for about 10 minutes, until just tender. Drain and set aside.
