This Southern Potato Salad is the epitome of comfort food, with its creamy texture and tangy, flavorful dressing. - Ingredients:
- 4 cups potatoes, peeled and cubed
- 1/2 cup mayonnaise

- 1 teaspoon celery seed
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder

- 2 hard-boiled eggs, chopped
- 1/2 cup diced celery
- 1/4 cup chopped red onion
- Fresh parsley for garnish (optional)
Directions:
- In a large pot, bring the cubed potatoes to a boil in salted water. Cook for 10-12 minutes, or until the potatoes are tender when pierced with a fork. Drain and let cool.
- While the potatoes are cooling, prepare the dressing by combining the mayonnaise, mustard, sweet pickle relish, apple cider vinegar, celery seed, onion powder, garlic powder, salt, and pepper in a large mixing bowl. Stir until well combined.
- Add the cooled potatoes to the dressing mixture, and gently fold to coat the potatoes evenly.
- Stir in the chopped eggs, diced celery, and red onion, mixing everything together gently to combine.
- Cover the potato salad and refrigerate for at least 2 hours to allow the flavors to meld.
- Before serving, sprinkle with paprika and garnish with fresh parsley, if desired.
