This Broccoli Rice Chicken and Cheese Casserole is the perfect meal for a cozy dinner with the family. The combination of tender chicken, fluffy rice, and crisp broccoli, all coated in a creamy cheese sauce, creates a satisfying and delicious dish. The gooey melted cheese on top adds an irresistible richness, while the optional crunchy breadcrumb topping gives it just the right amount of texture.
- Ingredients:
- 2 cups cooked chicken, shredded or diced
- 1 1/2 cups cooked rice (white or brown)
- 2 cups broccoli florets, steamed
- 1 can (10.5 oz) cream of chicken soup
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper, to taste
- 1/2 cup breadcrumbs (optional for topping)
- 1 tablespoon butter (optional for topping)
Directions:
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the cooked chicken, cooked rice, steamed broccoli, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until everything is evenly mixed.
- Fold in 1 cup of shredded cheddar cheese and Parmesan cheese, then pour the mixture into the prepared baking dish.
- Sprinkle the remaining 1/2 cup of cheddar cheese on top of the casserole.
- For the optional breadcrumb topping, melt the butter in a small skillet over medium heat. Add the breadcrumbs and sauté for 2-3 minutes until golden and crispy. Sprinkle the toasted breadcrumbs over the casserole.
- Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and slightly golden.
- Remove from the oven and let it cool for a few minutes before serving.
