  1. Ingredients:
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large bell peppers, chopped
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • Fresh parsley for garnish (optional)

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks.
  3. Add the chopped onion and minced garlic to the skillet and cook for another 3 minutes until softened.
  4. Stir in the diced tomatoes, cooked rice, oregano, basil, salt, and pepper. Let the mixture simmer for 5 minutes.
  5. Add the chopped bell peppers to the skillet and mix until everything is well combined.
  6. Pour the beef mixture into a 9×13-inch baking dish, spreading it out evenly.
  7. Pour the beef broth over the casserole. Cover the dish with aluminum foil and bake for 25 minutes.
  8. After 25 minutes, remove the foil and sprinkle the shredded cheddar cheese over the casserole.
  9. Return the dish to the oven and bake for another 10 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh parsley if desired, and serve hot.
