Ingredients:
- 1 ½ pounds fresh strawberries, hulled and sliced
- 1 pre-baked 9-inch pie crust
- 1 cup sugar
- 2 tablespoons cornstarch
- ¼ cup water
- 1 teaspoon lemon juice
- 1 tablespoon butter
- ½ teaspoon vanilla extract
- Whipped cream (for serving)
Directions:
- In a medium saucepan, combine the sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- Once thickened, remove from heat and stir in the lemon juice, butter, and vanilla extract.
- Add the sliced strawberries to the saucepan and gently mix to coat them with the syrup.
- Pour the strawberry mixture into the pre-baked pie crust and spread evenly.
- Allow the pie to cool to room temperature, then refrigerate for at least 2 hours or until set.
