This Loaded Potato & Meatloaf Casserole combines two comfort food favorites into one irresistible dish. The savory meatloaf forms the perfect base, while the creamy mashed potatoes on top bring a rich and velvety texture. The melted cheddar cheese and crispy bacon add extra flavor and texture, making every bite a satisfying treat.
Ingredients:
- 1 lb ground beef
- 1/2 cup bread crumbs
- 1/4 cup milk
- 1 large egg
- 1/2 onion, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 4 large russet potatoes, peeled and cubed
- 1/2 cup sour cream
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 2 tablespoons chopped green onions (for garnish)
Directions:
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- In a large bowl, combine the ground beef, bread crumbs, milk, egg, chopped onion, garlic powder, salt, pepper, and dried thyme. Mix well and form into a meatloaf shape, placing it in the center of the prepared baking dish.
- In a large pot, boil the cubed potatoes in salted water for 10-12 minutes, or until fork-tender. Drain the potatoes and return them to the pot.
- Mash the potatoes with sour cream and butter until smooth. Season with salt and pepper to taste.
- Spread the mashed potatoes over the meatloaf in the baking dish, creating an even layer.
- Sprinkle the shredded cheddar cheese and crumbled bacon over the mashed potatoes.
- Bake the casserole for 20-25 minutes, or until the cheese is melted and bubbly.
