This Loaded Potato & Meatloaf Casserole combines two comfort food favorites into one irresistible dish. The savory meatloaf forms the perfect base, while the creamy mashed potatoes on top bring a rich and velvety texture. The melted cheddar cheese and crispy bacon add extra flavor and texture, making every bite a satisfying treat.

Ingredients:

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 onion, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup sour cream
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 2 tablespoons chopped green onions (for garnish)

Directions:

  1. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large bowl, combine the ground beef, bread crumbs, milk, egg, chopped onion, garlic powder, salt, pepper, and dried thyme. Mix well and form into a meatloaf shape, placing it in the center of the prepared baking dish.
  3. In a large pot, boil the cubed potatoes in salted water for 10-12 minutes, or until fork-tender. Drain the potatoes and return them to the pot.
  4. Mash the potatoes with sour cream and butter until smooth. Season with salt and pepper to taste.
  5. Spread the mashed potatoes over the meatloaf in the baking dish, creating an even layer.
  6. Sprinkle the shredded cheddar cheese and crumbled bacon over the mashed potatoes.
  7. Bake the casserole for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Garnish with chopped green onions before serving. Serve warm and enjoy!
