Cabbage Roll Soup is the epitome of comfort food. The tender cabbage, perfectly browned ground beef, and savoury broth come together to create a hearty and filling soup that is perfect for warming you up on a chilly day.
- Ingredients:
- 500g ground beef (or turkey)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 medium cabbage, shredded
- 1 can (400g) diced tomatoes
- 1 can (400g) tomato sauce
- 1 cup beef broth (or vegetable broth)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon ground paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup rice (uncooked)
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Directions:
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking for 2-3 minutes until soft and fragrant.
- Add the ground beef (or turkey) to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes.
- Stir in the shredded cabbage and cook for 3-4 minutes, allowing it to soften slightly.
- Add the diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, basil, paprika, salt, pepper, and rice. Stir well to combine.
- Bring the soup to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the rice is cooked and the flavours have melded together.
- Taste and adjust seasoning if needed, adding more salt, pepper, or Worcestershire sauce if desired.
- Serve hot, garnished with freshly chopped parsley.
