This Creamy Chicken Tuscan Pasta is an irresistible combination of tender chicken, rich creamy sauce, and tangy sun-dried tomatoes. The blend of Italian herbs and parmesan cheese creates a comforting yet sophisticated dish that’s perfect for any weeknight meal.
- Ingredients:
- 2 boneless, skinless chicken breasts, cut into strips
- 300g pasta (such as penne or fettuccine)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon dried Italian herbs
- 1/2 teaspoon chilli flakes (optional)
- 200g sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 200ml double cream
- 50g parmesan cheese, grated
- Salt and pepper to taste
- Fresh basil, chopped (for garnish)
Directions:
- Cook the pasta according to the package instructions, then drain and set aside, reserving some of the pasta water.
- In a large pan, heat olive oil over medium heat. Add the chicken strips and season with salt, pepper, and Italian herbs. Cook for 6-8 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the pan and set aside.
- In the same pan, add the minced garlic and cook for 1 minute until fragrant.
- Add the chopped sun-dried tomatoes, chicken broth, and double cream. Stir and let it simmer for 3-4 minutes, allowing the sauce to thicken slightly.
- Return the chicken to the pan and stir in the cooked pasta. Add grated parmesan cheese and mix well, adjusting the consistency of the sauce with some reserved pasta water if necessary.
- Taste and season with more salt, pepper, and chilli flakes (if desired).
- Garnish with fresh basil before serving.
