This Ricotta Spinach Quiche is the ideal dish for brunch or a light dinner. The creamy ricotta cheese pairs perfectly with the spinach, while the combination of eggs and Parmesan creates a rich, satisfying texture. Ingredients:

  • 1 pre-made pie crust (or homemade)
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded mozzarella cheese

Directions:

  1. Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for 3-4 minutes, until softened.
  3. Add the chopped spinach to the skillet and cook for another 3-4 minutes, until wilted. Remove from heat and set aside to cool.
  4. In a large bowl, whisk together the ricotta cheese, Parmesan cheese, eggs, heavy cream, nutmeg, salt, and pepper until smooth.
  5. Stir in the cooked spinach mixture and shredded mozzarella cheese.
  6. Pour the quiche mixture into the prepared pie crust and spread evenly.
  7. Bake for 35-40 minutes, or until the center is set and lightly golden. Let the quiche cool for a few minutes before slicing and serving.
