These Broccoli Cheddar Muffins are a perfect balance of fluffy texture and rich, cheesy flavour, with the addition of broccoli adding a wholesome touch. Ideal for breakfast, lunchboxes, or as a savoury snack, these muffins are both delicious and nutritious.
- Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 cup broccoli florets, finely chopped
- 1 cup cheddar cheese, grated
- 2 large eggs
- 1/2 cup milk
- 1/4 cup olive oil
- 1 tablespoon honey (optional)
- 1/2 teaspoon mustard powder (optional)
Directions:
- Preheat the oven to 180°C (160°C fan)/350°F. Line a 12-cup muffin tin with paper liners or lightly grease the cups.
- In a large bowl, whisk together the flour, baking powder, salt, pepper, garlic powder, and mustard powder (if using).
- Stir in the finely chopped broccoli and grated cheddar cheese until evenly distributed.
- In a separate bowl, beat the eggs, then add the milk, olive oil, and honey (if using). Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can lead to dense muffins.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-22 minutes, or until the muffins are golden and a toothpick inserted into the centre comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
