These Caramel Marshmallow Rice Krispie Balls are a sweet and gooey treat with the perfect balance of chewy marshmallow, buttery caramel, and crisp Rice Krispies. A delightful combination of textures and flavours, they are perfect for snacking or sharing at parties.
- Ingredients:
- 3 cups Rice Krispies cereal
- 2 tablespoons unsalted butter
- 1 bag (200g) mini marshmallows
- 1/2 cup caramel sauce (store-bought or homemade)
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup chocolate chips (optional, for drizzling)
Directions:
- Line a baking tray with parchment paper or lightly grease it. Set aside.
- In a large saucepan, melt the butter over medium heat. Once melted, add the mini marshmallows and stir constantly until they are completely melted and smooth.
- Stir in the caramel sauce, vanilla extract, and a pinch of salt, ensuring everything is well combined.
- Remove the saucepan from the heat and fold in the Rice Krispies cereal. Stir gently until all the cereal is evenly coated with the marshmallow-caramel mixture.
- Allow the mixture to cool for 5-10 minutes, making it easier to handle.
- Once slightly cooled, use your hands to form small balls, about 1-1.5 inches in diameter, from the mixture. Place them on the prepared baking tray.
- If desired, melt the chocolate chips in the microwave or over a double boiler, and drizzle over the Rice Krispie balls.
- Let the balls cool completely before serving. Once set, they are ready to enjoy!
