These Caramel Marshmallow Rice Krispie Balls are a sweet and gooey treat with the perfect balance of chewy marshmallow, buttery caramel, and crisp Rice Krispies. A delightful combination of textures and flavours, they are perfect for snacking or sharing at parties.

  1. Ingredients:
    • 3 cups Rice Krispies cereal
    • 2 tablespoons unsalted butter
    • 1 bag (200g) mini marshmallows
    • 1/2 cup caramel sauce (store-bought or homemade)
    • 1 teaspoon vanilla extract
    • Pinch of salt
    • 1/2 cup chocolate chips (optional, for drizzling)

Directions:

  1. Line a baking tray with parchment paper or lightly grease it. Set aside.
  2. In a large saucepan, melt the butter over medium heat. Once melted, add the mini marshmallows and stir constantly until they are completely melted and smooth.
  3. Stir in the caramel sauce, vanilla extract, and a pinch of salt, ensuring everything is well combined.
  4. Remove the saucepan from the heat and fold in the Rice Krispies cereal. Stir gently until all the cereal is evenly coated with the marshmallow-caramel mixture.
  5. Allow the mixture to cool for 5-10 minutes, making it easier to handle.
  6. Once slightly cooled, use your hands to form small balls, about 1-1.5 inches in diameter, from the mixture. Place them on the prepared baking tray.
  7. If desired, melt the chocolate chips in the microwave or over a double boiler, and drizzle over the Rice Krispie balls.
  8. Let the balls cool completely before serving. Once set, they are ready to enjoy!
