This batter recipe creates a light and crispy coating that’s perfect for deep-fried fish or seafood. The use of cornstarch and baking powder gives the batter its signature crunch, while the sparkling water or beer adds lightness and a subtle richness.
- Ingredients:
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
- 1 cup cold sparkling water (or cold beer for a richer batter)
- 1 tablespoon vegetable oil
- Oil for frying (vegetable or canola)
Directions:
- In a large bowl, whisk together the flour, cornstarch, baking powder, salt, sugar, garlic powder, and onion powder (if using).
- Gradually add the cold sparkling water (or beer) and vegetable oil to the dry ingredients, stirring gently until the batter is smooth and thickened. Be careful not to over-mix.
- Heat oil in a deep fryer or large saucepan to 180°C (350°F). You need enough oil to submerge the fish or other items you plan to fry.
- Dip your fish fillets, shrimp, or vegetables into the batter, making sure they are fully coated.
- Carefully lower the battered items into the hot oil, cooking in batches if necessary. Fry for 3-5 minutes, or until golden and crispy.
- Remove from the oil and drain on a plate lined with paper towels. Serve immediately with your favourite dipping sauce.
