Chicken Francese is a classic Italian-American dish that combines crispy, tender chicken with a vibrant, tangy lemon and white wine sauce. The rich garlic butter sauce infuses the chicken with a depth of flavour, making it a deliciously comforting meal.

  1. Ingredients:
    • 4 boneless, skinless chicken breasts
    • Salt and pepper, to taste
    • 1/2 cup all-purpose flour
    • 2 large eggs, beaten
    • 2 tablespoons olive oil
    • 2 tablespoons unsalted butter
    • 3 garlic cloves, minced
    • 1/2 cup dry white wine
    • 1/2 cup chicken broth
    • Zest and juice of 1 lemon
    • Fresh parsley, chopped (for garnish)

Directions:

  1. Season the chicken breasts with salt and pepper. Dredge each piece of chicken in flour, shaking off the excess, then dip in the beaten eggs, coating well.
  2. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, melt the butter and sauté the garlic for 1-2 minutes until fragrant.
  4. Add the white wine, chicken broth, lemon zest, and lemon juice to the pan, stirring to combine. Let the sauce simmer for 3-4 minutes, reducing slightly.
  5. Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2 minutes, allowing the flavours to meld together.
  6. Garnish with chopped parsley before serving.
