For the Cake:
- 1 box yellow cake mix (or homemade cake mix)
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup crushed pineapple, drained (reserve juice)

- 1/2 cup shredded coconut (optional)
For the Frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoons pineapple juice (reserved from the cake)
For Garnish:
- 1/4 cup shredded coconut (toasted, optional)
- Pineapple slices or pineapple chunks (optional)
Directions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, prepare the cake mix according to the package directions, adding in the vegetable oil, eggs, drained crushed pineapple, and vanilla extract. Mix until smooth.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- While the cake cools, prepare the frosting. Beat together the cream cheese and butter until smooth and fluffy. Gradually add the powdered sugar, vanilla extract, and pineapple juice, continuing to beat until well combined and smooth.
