Ingredients:
For the crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup melted butter
For the filling:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- ¾ cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 drop pink gel food coloring (optional, for tint)
- 1 ½ cups chopped Snickers bars
For the topping:
- ¾ cup heavy cream
- 1 cup semi-sweet chocolate chips
- ½ cup chopped Snickers
- ½ cup pink M&Ms (plus extra for garnish)
Directions:
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the outside with foil.
- Combine graham crumbs, sugar, and melted butter. Press into the bottom of the pan to form crust. Bake for 10 minutes. Let cool.
- Beat cream cheese and sugar until smooth. Add sour cream and vanilla, then eggs one at a time. Add food coloring and mix well.
- Fold in chopped Snickers. Pour mixture over crust and smooth the top.
- Place pan in a water bath and bake for 55–65 minutes, until center is set but slightly jiggly. Cool to room temperature, then refrigerate 4+ hours or overnight.
- Heat cream and pour over chocolate chips to create ganache. Stir until smooth, then spread over chilled cheesecake.
- Top with chopped Snickers and pink M&Ms. Chill another 30 minutes before serving.
