Bacon Cheeseburger Rice is a one-skillet comfort meal that brings all your fast-food cravings into a hearty homemade dish. Think juicy beef, crispy bacon, melted cheddar, and classic burger flavors folded into fluffy rice.

It’s quick, budget-friendly, and perfect for busy nights when you want something comforting without a lot of cleanup. Customize it with pickles, tomatoes, or a drizzle of your favorite burger sauce. Bonus: it reheats beautifully for next-day lunches!

Ingredients:

  • 1 lb ground beef
  • 5 strips bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice (or use leftover rice)
  • 1 cup shredded cheddar cheese
  • ½ cup diced tomatoes (optional)
  • ¼ cup ketchup
  • 1 tablespoon yellow mustard
  • ½ teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped pickles (optional, for topping)
  • Chopped parsley or green onions for garnish

Directions:

  1. In a large skillet over medium heat, cook chopped bacon until crispy. Remove and set aside, leaving 1–2 tablespoons of bacon grease in the pan.
  2. Add diced onion and garlic to the pan and sauté for 2–3 minutes until softened.
  3. Add ground beef, breaking it up as it cooks. Cook until browned, then drain excess fat.
  4. Stir in ketchup, mustard, paprika, salt, and pepper. Mix well.
  5. Add cooked rice and stir to combine everything evenly.
  6. Reduce heat to low, sprinkle cheese over the top, and cover for 2–3 minutes until melted.
  7. Top with crispy bacon, pickles (if using), and chopped parsley or green onions.
  8. Serve warm with extra ketchup or hot sauce if desired.
