Ingredients:
- 4 salmon fillets (6 oz each), skin on or off
- 1/2 cup lump crab meat
- 1/2 cup small cooked shrimp, chopped
- 2 oz cream cheese, softened
- 1/4 cup mayonnaise
- 1/4 cup shredded mozzarella or Parmesan cheese
- 1 tablespoon lemon juice
- 1/2 teaspoon Old Bay seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1 tablespoon chopped parsley (plus more for garnish)
- Lemon wedges, for serving
Directions:
- Preheat oven to 375°F (190°C). Line a baking dish with parchment or lightly grease it.
- In a medium bowl, mix together crab meat, shrimp, cream cheese, mayonnaise, cheese, lemon juice, Old Bay seasoning, garlic powder, parsley, salt, and pepper until fully combined.
- Using a sharp knife, make a slit in the center of each salmon fillet to create a pocket (do not cut all the way through).
- Spoon the seafood stuffing into the pocket of each fillet, dividing evenly.
- Place stuffed fillets in the baking dish and bake for 18–20 minutes, or until the salmon flakes easily with a fork and the stuffing is hot and bubbly.
- Garnish with chopped parsley and serve with lemon wedges.
