Ingredients:

  • 2 large yellow onions
  • 1 lb ground beef
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 8 slices bacon
  • BBQ sauce, for brushing (optional)
  • Toothpicks or skewers, for securing

Directions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
  2. Peel onions and slice in half from top to bottom. Carefully remove the inner layers, keeping the outer 2–3 layers intact. These will form your “onion bomb shells.” Set aside.
  3. In a bowl, combine ground beef, cheddar cheese, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  4. Shape the beef mixture into balls that fit inside the hollowed onion shells.
  5. Enclose the meatballs between two matching onion halves to form a complete sphere.
  6. Wrap each bomb with 2 slices of bacon, securing with toothpicks or skewers.
  7. Place the bombs on the baking sheet and bake for 35–40 minutes, or until bacon is crispy and internal temp reaches 160°F (71°C).
  8. Optional: Brush with BBQ sauce during the last 5 minutes of baking for added flavor and glaze.
  9. Let rest 5 minutes before serving. Enjoy hot!
