Ingredients:
- 1 lb ground beef
- 5 strips bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups cooked white rice (or use leftover rice)
- 1 cup shredded cheddar cheese
- ½ cup diced tomatoes (optional)
- ¼ cup ketchup
- 1 tablespoon yellow mustard
- ½ teaspoon smoked paprika
- Salt and black pepper to taste
- 2 tablespoons chopped pickles (optional, for topping)
- Chopped parsley or green onions for garnish
Directions:
- In a large skillet over medium heat, cook chopped bacon until crispy. Remove and set aside, leaving 1–2 tablespoons of bacon grease in the pan.
- Add diced onion and garlic to the pan and sauté for 2–3 minutes until softened.
- Add ground beef, breaking it up as it cooks. Cook until browned, then drain excess fat.
- Stir in ketchup, mustard, paprika, salt, and pepper. Mix well.
- Add cooked rice and stir to combine everything evenly.
- Reduce heat to low, sprinkle cheese over the top, and cover for 2–3 minutes until melted.
- Top with crispy bacon, pickles (if using), and chopped parsley or green onions.
- Serve warm with extra ketchup or hot sauce if desired.
