  1. Baked Apple Fritters

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 cup diced apples (about 1-2 apples)
  • 1/4 cup melted butter
  • 1/2 cup powdered sugar (for glaze)
  • 1-2 tbsp milk (for glaze)
  • Extra cinnamon sugar for sprinkling

Directions:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix the milk, eggs, applesauce, and melted butter until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples.
  5. Using a spoon or cookie scoop, drop heaping tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 15-20 minutes, or until the fritters are lightly golden and cooked through.
  7. While the fritters are baking, prepare the glaze by mixing powdered sugar with 1-2 tablespoons of milk until smooth.
  8. Once baked, remove the fritters from the oven and let them cool slightly. Drizzle with glaze and sprinkle with extra cinnamon sugar before serving.
