- Banana Bread Cake with Cream Cheese Frosting
Ingredients:
- For the Cake:
- 2 ripe bananas, mashed
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream (optional, for consistency)
Directions:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Add the mashed bananas and sour cream to the wet ingredients, and mix until combined. Gradually add the dry ingredients, mixing until just combined.
- Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
- While the cake cools, prepare the frosting. Beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, vanilla extract, and heavy cream, if using, until the frosting reaches a spreadable consistency.
- Once the cake is completely cooled, spread the cream cheese frosting evenly over the top. Slice and serve.
