These Banana French Toast Roll-Ups are the perfect combination of crispy, golden toast and sweet banana filling. Lightly spiced with cinnamon and finished with a dusting of powdered sugar, they are a delightful twist on traditional French toast.

  1. Ingredients:
    • 8 slices of white or wholemeal bread (crusts removed)
    • 2 ripe bananas, mashed
    • 1 teaspoon cinnamon
    • 1 tablespoon sugar
    • 2 large eggs
    • 1/4 cup milk
    • 1 teaspoon vanilla extract
    • 1 tablespoon butter (for frying)
    • Powdered sugar (for dusting)
    • Maple syrup (for serving)

Directions:

  1. Flatten the bread slices with a rolling pin to make them easier to roll.
  2. In a small bowl, combine the mashed bananas, cinnamon, and sugar. Spread a generous tablespoon of the banana mixture evenly over each slice of bread.
  3. Roll up each slice of bread tightly to form a log.
  4. In a shallow dish, whisk together the eggs, milk, and vanilla extract until well combined.
  5. Heat butter in a large frying pan over medium heat. Dip each roll-up into the egg mixture, ensuring it is fully coated, then fry them in the pan for 2-3 minutes on each side, or until golden brown and crispy.
  6. Remove the roll-ups from the pan and place them on a plate lined with paper towels to drain any excess butter.
  7. Dust the roll-ups with powdered sugar and serve immediately with maple syrup.
