Ingredients:

  • 2 cups cooked shredded chicken (rotisserie works great)
  • 1/2 cup BBQ sauce
  • 1 1/2 cups shredded mozzarella or Monterey Jack cheese
  • 1/2 cup thinly sliced red onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 4 large flour tortillas
  • 1 tablespoon butter or oil, for cooking
  • Optional for dipping: ranch, sour cream, or extra BBQ sauce

Directions:

  1. In a bowl, mix shredded chicken with BBQ sauce until fully coated.
  2. Lay out tortillas and sprinkle cheese evenly on half of each tortilla.
  3. Top with BBQ chicken, sliced red onions, and cilantro if using.
  4. Fold each tortilla in half to form a half-moon shape.
  5. Heat a large skillet over medium heat and add butter or oil.
  6. Cook quesadillas one or two at a time, 2–3 minutes per side, until golden brown and cheese is melted.
