Bean with Bacon Soup Recipe

Ingredients
- 6 to 8 slices thick-cut bacon chopped
- 1 medium onion finely chopped
- 2 carrots diced
- 2 celery stalks diced
- 3 cloves garlic minced
- 2 tablespoons tomato paste
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 cups chicken broth
- 2 cans navy beans drained and rinsed
- Salt and pepper to taste
- 1 tablespoon apple cider vinegar
- Chopped parsley for garnish
Steps
- Cook bacon in a large pot until crisp. Remove and set aside, leaving some drippings.
- Add onion, carrots, and celery; cook until tender.
- Stir in garlic, tomato paste, paprika, thyme, and bay leaf; cook 1 minute.
- Add broth and beans. Simmer 25–30 minutes.
- Blend part of the soup for a creamy texture, if desired.
- Stir in vinegar and bacon. Season to taste.
- Serve warm with parsley and bread.
