Ingredients:

  • 1 lb ground beef
  • 1 tablespoon taco seasoning
  • ½ cup water
  • 1 cup cooked Mexican rice (or Spanish rice)
  • ½ cup sour cream
  • ½ cup nacho cheese sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 4 large flour tortillas
  • 4 tablespoons butter, softened
  • Optional: diced tomatoes, chopped lettuce, jalapeños, or crushed tortilla chips for extra crunch

Directions:

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and water. Stir and simmer until thickened, about 5 minutes.
  3. Warm the tortillas in a microwave or skillet to make them pliable.
  4. Lay each tortilla flat and layer with beef, cooked rice, sour cream, nacho cheese, and shredded cheddar and mozzarella. Add optional toppings if desired.
  5. Fold in the sides and roll tightly into burritos.
  6. Heat a skillet over medium heat. Spread butter on the outside of each burrito.
  7. Grill each burrito seam-side down first for 2–3 minutes per side, until golden and crispy with melty cheese inside.
  8. Slice and serve hot with extra sour cream or salsa for dipping.
