Ingredients:

  • 5 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 carrots, peeled and diced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions:

In a large pot, melt butter over medium heat. Add onions and carrots, cooking until softened.
