Ingredients:

  • 2 & 1/2 cups all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup butter, softened (preferably salted)
  • 2 cups white sugar, divided
  • 2 large eggs
  • 2 tsp. cinnamon

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Sift together flour, baking powder, and salt in a bowl.
  3. In a separate bowl, cream together the butter and 1 & 1/2 cups sugar until pale yellow (about 2-3 minutes).
  4. Mix in eggs one at a time until well combined.
  5. Gradually add the flour mixture, mixing 1/2 cup at a time, until a dough forms.
  6. In a small bowl, mix together the remaining 1/2 cup sugar and cinnamon.
  7. Roll the dough into 1-3/4 inch balls, then roll each ball in the cinnamon-sugar mixture.
  8. Place the dough balls 3 inches apart on an ungreased baking sheet.
  9. Bake for 9-10 minutes or until lightly golden (note: oven temperatures may vary).
