Ingredients:
- 2 & 1/2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 cup butter, softened (preferably salted)
- 2 cups white sugar, divided
- 2 large eggs
- 2 tsp. cinnamon
Directions:
- Preheat oven to 350°F (175°C).
- Sift together flour, baking powder, and salt in a bowl.
- In a separate bowl, cream together the butter and 1 & 1/2 cups sugar until pale yellow (about 2-3 minutes).
- Mix in eggs one at a time until well combined.
- Gradually add the flour mixture, mixing 1/2 cup at a time, until a dough forms.
- In a small bowl, mix together the remaining 1/2 cup sugar and cinnamon.
- Roll the dough into 1-3/4 inch balls, then roll each ball in the cinnamon-sugar mixture.
- Place the dough balls 3 inches apart on an ungreased baking sheet.
- Bake for 9-10 minutes or until lightly golden (note: oven temperatures may vary).
