Ingredients:
- 2 cups cooked rice, cooled
- 1 cup mixed vegetables (carrots, peas, bell peppers), chopped
- 2 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 2 eggs, beaten
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Directions:
- In a large wok or skillet, heat the vegetable oil over medium-high heat.
- Add the garlic and ginger, sauté for 1 minute.
- Add the mixed vegetables and stir-fry until tender-crisp, about 3-4 minutes.
- Push the vegetables to the side, add the beaten eggs to the pan, and scramble.

- Season with salt and pepper to taste.
