Ingredients:

  • 2 cups cooked rice, cooled
  • 1 cup mixed vegetables (carrots, peas, bell peppers), chopped
  • 2 green onions, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 2 eggs, beaten
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Directions:

  1. In a large wok or skillet, heat the vegetable oil over medium-high heat.
  2. Add the garlic and ginger, sauté for 1 minute.
  3. Add the mixed vegetables and stir-fry until tender-crisp, about 3-4 minutes.
  4. Push the vegetables to the side, add the beaten eggs to the pan, and scramble.
