This Fresh Strawberry Pie is the epitome of a perfect summer dessert. With its vibrant red strawberries nestled inside a flaky, golden pie crust, it’s a treat for both the eyes and the taste buds. The natural sweetness of the strawberries shines through, complemented by a light syrup that gives the pie just the right amount of richness.

Ingredients:

  • 1 ½ pounds fresh strawberries, hulled and sliced
  • 1 pre-baked 9-inch pie crust
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • ¼ cup water
  • 1 teaspoon lemon juice
  • 1 tablespoon butter
  • ½ teaspoon vanilla extract
  • Whipped cream (for serving)

Directions:

  1. In a medium saucepan, combine the sugar, cornstarch, and water. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  2. Once thickened, remove from heat and stir in the lemon juice, butter, and vanilla extract.
  3. Add the sliced strawberries to the saucepan and gently mix to coat them with the syrup.
  4. Pour the strawberry mixture into the pre-baked pie crust and spread evenly.
  5. Allow the pie to cool to room temperature, then refrigerate for at least 2 hours or until set.
  6. Serve chilled with a dollop of whipped cream.
