Ingredients:

  • 4 slices thick-cut bread (sourdough or brioche recommended)
  • 4 large eggs
  • 4 strips bacon, cooked and crispy
  • 1 tablespoon butter (for eggs)
  • 1 tablespoon milk
  • 1 cup shredded cheddar cheese
  • 1 tablespoon butter (for bread)
  • Salt and pepper to taste
  • Optional: sliced avocado, spinach, or hot sauce for extra flair

Directions:

  1. In a bowl, whisk eggs with milk, salt, and pepper.
  2. In a non-stick skillet, melt 1 tablespoon butter and scramble eggs over medium heat until just set. Set aside.
  3. Butter one side of each bread slice. Lay two slices, butter-side down, in a clean skillet or griddle over medium heat.
  4. Layer with half the shredded cheddar, scrambled eggs, bacon, and remaining cheese. Top with remaining bread slices, butter-side up.
  5. Grill sandwiches for 2–3 minutes per side until golden brown and crispy, and cheese is melted.
  6. Slice in half and serve warm. Add avocado or hot sauce if desired.
