This Broccoli Rice Chicken and Cheese Casserole is the perfect meal for a cozy dinner with the family. The combination of tender chicken, fluffy rice, and crisp broccoli, all coated in a creamy cheese sauce, creates a satisfying and delicious dish. The gooey melted cheese on top adds an irresistible richness, while the optional crunchy breadcrumb topping gives it just the right amount of texture.

  1. Ingredients:
  • 2 cups cooked chicken, shredded or diced
  • 1 1/2 cups cooked rice (white or brown)
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper, to taste
  • 1/2 cup breadcrumbs (optional for topping)
  • 1 tablespoon butter (optional for topping)

Directions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine the cooked chicken, cooked rice, steamed broccoli, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir until everything is evenly mixed.
  3. Fold in 1 cup of shredded cheddar cheese and Parmesan cheese, then pour the mixture into the prepared baking dish.
  4. Sprinkle the remaining 1/2 cup of cheddar cheese on top of the casserole.
  5. For the optional breadcrumb topping, melt the butter in a small skillet over medium heat. Add the breadcrumbs and sauté for 2-3 minutes until golden and crispy. Sprinkle the toasted breadcrumbs over the casserole.
  6. Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted and slightly golden.
  7. Remove from the oven and let it cool for a few minutes before serving.
