Ingredients:

  • 2 lbs chicken wings (split at joints, tips removed)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon oil (vegetable or olive)

For the Sauce:

  • 1 cup pineapple juice
  • 1/2 cup brown sugar (light or dark)
  • 1/4 cup soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon cornstarch mixed with 1 tablespoon water (slurry)
  • Optional: red pepper flakes for heat

Directions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Pat chicken wings dry, then toss with salt, pepper, and oil. Arrange on rack in a single layer.
  3. Bake for 40–45 minutes, flipping halfway through, until golden and crispy.
  4. While wings bake, combine pineapple juice, brown sugar, soy sauce, vinegar, garlic, and ginger in a saucepan over medium heat.
  5. Bring to a simmer and cook for 5–7 minutes. Stir in cornstarch slurry and cook until thickened, 1–2 minutes.
  6. Toss baked wings in sauce until coated. Return to oven for 5–7 minutes to caramelize, or broil for 2–3 minutes for extra stickiness.
  7. Serve warm, garnished with green onions or sesame seeds if desired.
