Butter Pecan Cookies

Ingredients:

  • 1 cup pecans, chopped
  • 7 tbsp. unsalted butter
  • 1/3 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tablespoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • A pinch of salt
  • Pecan halves for the top of each cookie

Directions:

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, beat the butter, granulated sugar, and brown sugar with an electric mixer until light and creamy.
  3. Add the eggs and vanilla extract, and beat for another 2 minutes until fully incorporated.
  4. Gradually add the flour, baking soda, and salt, mixing until well combined.
  5. Using a medium cookie scoop, drop the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Press a pecan half on top of each cookie.
  7. Bake for 10-15 minutes, or until the cookies are golden brown.
  8. Transfer the cookies to a wire rack to cool completely.
