Ingredients:
- 1 cup pecans, chopped
- 7 tbsp. unsalted butter
- 1/3 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 tablespoon pure vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- A pinch of salt
- Pecan halves for the top of each cookie
Directions:
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, beat the butter, granulated sugar, and brown sugar with an electric mixer until light and creamy.
- Add the eggs and vanilla extract, and beat for another 2 minutes until fully incorporated.
- Gradually add the flour, baking soda, and salt, mixing until well combined.
- Using a medium cookie scoop, drop the dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Press a pecan half on top of each cookie.
- Bake for 10-15 minutes, or until the cookies are golden brown.
- Transfer the cookies to a wire rack to cool completely.
