These Buttery Pecan Snowball Cookies, known as Russian Tea Cakes or Mexican Wedding Cookies in some cultures, are a holiday favorite. Their buttery, nutty flavor and delicate powdered sugar coating make them a delightful treat for any festive occasion.
Ingredients:
- 1 cup butter, softened
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
- 2 1/4 cups flour
- 1 cup finely chopped pecans
- 1 cup powdered sugar for dusting
Directions:
- Preheat oven to 350°F (175°C).
- Cream butter and 1/2 cup powdered sugar in a mixer; add salt, vanilla, flour, and pecans.
- Roll into 1-inch balls; place on parchment-lined baking sheets.
- Bake for 11 minutes. Let cool slightly.
- Coat in powdered sugar using a Ziploc bag or bowl; place on cooling racks. Dust again in powdered sugar once cooled.
