Cabbage Roll Soup is the epitome of comfort food. The tender cabbage, perfectly browned ground beef, and savoury broth come together to create a hearty and filling soup that is perfect for warming you up on a chilly day.

  1. Ingredients:
  • 500g ground beef (or turkey)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 medium cabbage, shredded
  • 1 can (400g) diced tomatoes
  • 1 can (400g) tomato sauce
  • 1 cup beef broth (or vegetable broth)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup rice (uncooked)
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, cooking for 2-3 minutes until soft and fragrant.
  2. Add the ground beef (or turkey) to the pot, breaking it apart with a spoon. Cook until browned and no longer pink, about 5-7 minutes.
  3. Stir in the shredded cabbage and cook for 3-4 minutes, allowing it to soften slightly.
  4. Add the diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, oregano, basil, paprika, salt, pepper, and rice. Stir well to combine.
  5. Bring the soup to a boil, then reduce the heat to low and simmer for 30-35 minutes, or until the rice is cooked and the flavours have melded together.
  6. Taste and adjust seasoning if needed, adding more salt, pepper, or Worcestershire sauce if desired.
  7. Serve hot, garnished with freshly chopped parsley.
