This Cajun Salmon and Shrimp dish brings the vibrant flavors of the South straight to your kitchen. The combination of tender salmon, juicy shrimp, and a spicy, garlicky sauce creates a mouthwatering meal that’s sure to impress.

Ingredients:

  • 2 salmon fillets
  • 12 large shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup chicken broth or white wine
  • Juice of 1 lemon
  • Fresh parsley for garnish
  • Salt and pepper to taste

Directions:

  1. Pat the salmon fillets and shrimp dry with paper towels. Season both sides with Cajun seasoning, salt, and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets, skin-side down, and cook for 4-5 minutes on each side, until the salmon is cooked through and has a nice crust. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add the butter and garlic. Sauté for 1 minute until fragrant, then add the shrimp and cook for 2-3 minutes on each side, until they are pink and opaque.
  4. Add the cherry tomatoes to the skillet and cook for another 2 minutes, allowing them to soften slightly.
  5. Pour in the chicken broth or white wine and lemon juice, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2-3 minutes until slightly reduced.
  6. Return the salmon to the skillet, spooning the sauce over the top. Cook for an additional 1-2 minutes to warm through.
  7. Serve the salmon and shrimp hot, garnished with fresh parsley and extra lemon wedges if desired.
