This Cajun Salmon and Shrimp dish brings the vibrant flavors of the South straight to your kitchen. The combination of tender salmon, juicy shrimp, and a spicy, garlicky sauce creates a mouthwatering meal that’s sure to impress.
Ingredients:
- 2 salmon fillets
- 12 large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup chicken broth or white wine
- Juice of 1 lemon
- Fresh parsley for garnish
- Salt and pepper to taste
Directions:
- Pat the salmon fillets and shrimp dry with paper towels. Season both sides with Cajun seasoning, salt, and pepper.
- In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets, skin-side down, and cook for 4-5 minutes on each side, until the salmon is cooked through and has a nice crust. Remove the salmon from the skillet and set aside.
- In the same skillet, add the butter and garlic. Sauté for 1 minute until fragrant, then add the shrimp and cook for 2-3 minutes on each side, until they are pink and opaque.
- Add the cherry tomatoes to the skillet and cook for another 2 minutes, allowing them to soften slightly.
- Pour in the chicken broth or white wine and lemon juice, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 2-3 minutes until slightly reduced.
- Return the salmon to the skillet, spooning the sauce over the top. Cook for an additional 1-2 minutes to warm through.
- Serve the salmon and shrimp hot, garnished with fresh parsley and extra lemon wedges if desired.
