This Caramel Apple Eclair Cake is a delightful blend of creamy vanilla pudding, sweet cinnamon apples, and smooth caramel sauce. The layers of graham crackers create a delicious base, while the cool, no-bake process makes it a hassle-free treat for any occasion.
- Ingredients:
- 1 box graham crackers (about 9 sheets)
- 2 cups heavy cream
- 1 box instant vanilla pudding mix (4.5oz)
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 cups chopped apples (about 2 medium apples)
- 1/2 cup caramel sauce, plus extra for drizzling
- 1/4 cup brown sugar
- 1/2 teaspoon lemon juice
- 1/4 teaspoon salt
Directions:
- Begin by lining the bottom of a 9×13-inch baking dish with a layer of graham crackers. Break the crackers if needed to cover the bottom completely.
- In a large bowl, whisk together the heavy cream, vanilla pudding mix, milk, and vanilla extract until thickened and smooth.
- Spread half of the pudding mixture over the graham crackers in the baking dish.
- Add another layer of graham crackers on top of the pudding.
- Spread the remaining pudding mixture over the top, smoothing it out with a spatula.
- In a small bowl, combine the chopped apples, cinnamon, lemon juice, and brown sugar. Toss well to coat the apples.
- Spread the apple mixture over the top of the pudding layer.
- Drizzle caramel sauce over the apples, then top with a final layer of graham crackers.
- Cover the cake and refrigerate for at least 4 hours or overnight to let the flavours meld together.
