This Caramel Apple Eclair Cake is a delightful blend of creamy vanilla pudding, sweet cinnamon apples, and smooth caramel sauce. The layers of graham crackers create a delicious base, while the cool, no-bake process makes it a hassle-free treat for any occasion.

  1. Ingredients:
  • 1 box graham crackers (about 9 sheets)
  • 2 cups heavy cream
  • 1 box instant vanilla pudding mix (4.5oz)
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 2 cups chopped apples (about 2 medium apples)
  • 1/2 cup caramel sauce, plus extra for drizzling
  • 1/4 cup brown sugar
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon salt

Directions:

  1. Begin by lining the bottom of a 9×13-inch baking dish with a layer of graham crackers. Break the crackers if needed to cover the bottom completely.
  2. In a large bowl, whisk together the heavy cream, vanilla pudding mix, milk, and vanilla extract until thickened and smooth.
  3. Spread half of the pudding mixture over the graham crackers in the baking dish.
  4. Add another layer of graham crackers on top of the pudding.
  5. Spread the remaining pudding mixture over the top, smoothing it out with a spatula.
  6. In a small bowl, combine the chopped apples, cinnamon, lemon juice, and brown sugar. Toss well to coat the apples.
  7. Spread the apple mixture over the top of the pudding layer.
  8. Drizzle caramel sauce over the apples, then top with a final layer of graham crackers.
  9. Cover the cake and refrigerate for at least 4 hours or overnight to let the flavours meld together.
  10. Before serving, drizzle more caramel sauce on top for an extra touch of sweetness.
